I love fall and I love that you can find fresh cranberries everywhere. Cranberries are not only bright and flavorful they contain antioxidants. Antioxidants are wonderful nutrients in food that help protect our cells from free radical damage. The more antioxidants you can get the easier it is for you body to protect itself from all types of environmental factors.

The flavonoids in cranberries help protect against heart disease and may help lower LDL cholesterol.

One of my favorite cranberry recipes is Cranberry Avocado Salsa. This goes great with chicken or pork. It’s also tasty enough just by itself as a dip.

Cranberry Avocado Salsa

Adapted from Bon Appétit

Makes 3 ½ Cups

Ingredients:

1 yellow bell pepper, diced
1 (12oz) bag fresh cranberries
1/2 cup sugar
1/4 cup orange juice
1 small jalapeño, seeded and chopped thin
1 Tbsp orange peel, grated
2 small avocados, diced
1/4 cup fresh cilantro, chopped

Preparation:

In a food processor or blender, add cranberries, sugar and orange juice. Combine until cranberries are coarsely chopped. Transfer ingredients into medium bowl. Add diced bell pepper, jalapeño, and orange peel. Gently stir in diced avocado and cilantro. Season to taste with salt and pepper.
